One of the most underrated seafood items is the crab cake. When cooked well, crab cakes are among the most popular items at seafood buffets throughout the summer months. Whether you’re a seafood lover or not, a well prepared and cooked crab cake will make your mouth water.
As we’ve done in previous posts, let’s discuss one of our favorite recipes so that you can continue to eat delicious seafood meals from the comfort of your dining room table. Today’s recipe comes from Allrecipes.com and can be found here. It’s very quick and easy to follow and is sure to please the entire family.
To start, you’ll need to gather the following: one egg, eight ounces of crab meat, 1/8 teaspoon of red pepper flakes, three tablespoons of mayo, a tablespoon of butter, a tablespoon of minced green onions, four teaspoons of lemon juice, ½ cup of crushed buttery crackers, and one teaspoon of dried tarragon. This will be enough to make four crab cakes. If you need more, simply add more ingredients while keeping the proportions the same.
Once you’ve gathered all your ingredients, you’ll want to whisk the mayo, egg, red pepper flakes, green onions, tarragon and lemon juice together in a medium-sized bowl. Stir in the crab meat next but be gentle so the meat doesn’t break apart. Next mix in the crushed cracker crumbs to your desired consistency.
Over medium heat, use a skillet to heat up the butter. Create four patties from the crab mixture and place them onto the skillet. Cook for about five or six minutes on each side, or until golden brown.
